Pumpkin season is already in full swing and Halloween is not long in coming. You can do all kinds of things with pumpkin: from sweet to savory, there are no limits to your imagination. Pumpkin is also a great source of vitamins and provides us with beta-carotene and minerals such as magnesium, calcium and iron. So why not use it to create a healthy, sweet snack? We have therefore conjured up a healthy autumnal snack made from pumpkin and our porridge. The sweet pumpkin energy balls are full of healthy nutrients, satisfy your craving for sweets and keep you full for a long time. The pumpkin provides a great color and makes the healthy energy balls shine a bright orange. Perfect for a healthy snack in fall and around Halloween.

Ingredients

  • 250 g Hokkaido pumpkin
  • 100 g cashew nuts
  • 200 g 3Bears Porridge Cinnamon Apple or 3Bears Porridge Winter Magic
  • 30 g 3Bears Porridge A hearty classic
  • 1 tsp cinnamon
  • 2 tbsp maple syrup
  • 150 ml hot water
  • preparation

    First wash the pumpkin, cut it in half and scrape out the fibrous pulp with a spoon. Now cut the pulp into cubes. Boil some water in a small pot and cook the pumpkin cubes until soft.

    Chop the cashews into small pieces and mix in a large bowl with 3Bears Porridge Cinnamon Apple and 3Bears Porridge Kerniger Classic. Instead of cinnamon apple you can also use our winter magic. Then add cinnamon, maple syrup and hot water and mix everything well.

    As soon as the pumpkin has cooked until soft, pour off the remaining water and mash the pulp with a fork or a potato masher to form a pumpkin mash.

    Now knead the pumpkin mash into the porridge mixture and let it cool thoroughly. After cooling, form small energy balls from the dough.
