After the refreshing ice cream sandwich and the nutty mountaineer oats, we present you our recipe of the month, this time from our 3Bears community. But more on that in detail below!

    So go ahead! This month our recipe is from Bikabee. Your delicious vegan coconut tartlets with apple cinnamon base are perfect for a warm summer day because they taste super fresh and fruity!



    30 minutes | 2 tartlets


    Coconut filling

    • 250ml coconut milk
    • 1 tbsp coconut blossom sugar
    • 1 tablespoon of sugar
    • 2 tbsp desiccated coconut
    • 1/2 pack (20g) vanilla pudding powder

    3Bears Wooden Spoon Oat Tartlets


    1. Soak the dates in boiling water for 5 minutes.
    2. Puree all ingredients for the base into a soft mass.
    3. Press the sticky dough into two small tart cases or shape it yourself.
    4. Bring 200ml coconut milk to the boil over medium heat and stir in coconut blossom sugar, sugar and desiccated coconut.
    5. Dissolve the vanilla pudding powder in the remaining coconut milk and pour into the boiling milk, stirring constantly.
    6. Let the milk simmer on low heat for another 3 minutes.
    7. Pour the pudding-like mixture into the two tart bases and let the cakes cool in the refrigerator.
    8. Garnish with caramelised apples.
