Sunglasses on, bright sun on your face and cocktail umbrellas in your porridge... bring that summer feeling into your four walls! Pineapple, mango and apricot – these summer treasures bring soothing refreshment.

This overnight oats recipe is fresh and invigorating and reminiscent of a summery Pina Colada. Both as a smoothie and as overnight oats, they are perfect for summer - or of course spring, autumn or winter. With exotic fruits (our once limited summer variety Sommermärchen), prepared quickly and easily.

For 2 people I Preparation time: 15 minutes I Cooling time: at least 6 hours

Ingredients:

For the overnight oats:
100g 3Bears Porridge Exotic Fruits
100 ml coconut milk
100ml pineapple juice

For the yogurt-nut layer:
150g Skyr
1 tsp desiccated coconut
1 tsp lime juice
1 tbsp almond paste
1 tbsp honey

For decoration:
pineapple
lime
Coconut chips

Preparation:

  1. Mix 3Bears Porridge Exotic Fruits with the coconut milk and pineapple juice in a storage container (or half the amount in two 3Bears Porridge Overnight Oats jars).
  2. Place in the refrigerator and let it soak overnight (or at least 6 hours).
  3. The next morning, divide the overnight oats into 2 glasses.
  4. Carefully toast the coconut flakes in a pan
  5. Mix the yogurt with grated coconut, lime juice, almond butter and honey and layer on the overnight oats.
  6. Put 1/4 pineapple slices in the glasses and decorate the oats with coconut chips.
