Ingredients

Oat cookie dough

filling

  • 160ml apple juice
  • 100g sugar
  • some grated tonka beans
  • 45g cream
  • 20g cornstarch
  • 100g white chocolate coating
  • 100g butter
  • some lemon juice

preparation

  1. For the dough, mix all the ingredients together and pour thinly into metal cookie molds.
  2. Bake in the oven at 100°C for 10 minutes and then at 135°C for 20 minutes.
  3. For the filling, mix apple juice, sugar and tonka beans and bring to the boil.
  4. Add cream and cornstarch and simmer over low heat for 30 seconds. Stir constantly.
  5. Add the couverture and let the whole thing cool down to 50°C (lukewarm).
  6. Add butter, mix until creamy and season with a little lemon juice.
  7. Fill cookies and serve!
