Spring is finally here, the flowers are starting to bloom and we think that the breakfast table deserves some spring flair too!

These fabulous Apple Oat Muffins with our delicious Cinnamon Apple variety are perfect for a picnic in the sun or a coffee party with friends. You can also enchant your loved ones with the pretty little cakes at Easter brunch. On top of that, they are vegan and low in calories.

Apple Oatmeal Muffins Recipe Porridge

The recipe

Serving: 12 - 14 muffins Time: approx. 45 minutes, including 25 minutes baking time

You need:

  • 2 cups 3Bears Cinnamon Apple
  • 1 cup flour
  • 1 teaspoon Baking powder
  • ¼ tsp cinnamon
  • ½ tsp salt
  • 3 apples (e.g. Pink Lady)
  • ⅓ cup agave syrup (vegan)/honey
  • 2 egg substitutes (e.g. soak 2 tablespoons of ground linseed in 4 tablespoons of water)
  • ½ cup soy yogurt
  • ½ cup coconut oil, melted
  • ½ cup soy/oat milk

That's how it's done:

1. For the apple roses: Quarter an apple and remove the core. Cut it into very thin slices, place it on a baking tray and put it in the oven for a short time (approx. 10 minutes at 200 degrees) so that the slices become soft and "flexible" (alternatively in the microwave for 1-2 minutes).

2. Grate an apple and cut another into small cubes.
3. Mix all dry ingredients and mix in the apples. Put the remaining ingredients in a second bowl and mix them well.
4. Now mix the liquid mixture with the dry ingredients. Divide the batter evenly between muffin cups.

5. Now form small flowers out of the apple slices from the oven and press them into the middle of the dough.
6. Bake for approx. 20-25 minutes at 200 degrees and allow to cool thoroughly before eating.
