Healthy breakfast muffins with blueberries

Gesunde Frühstücksmuffins mit Blaubeeren

You can never have enough new ideas and inspiration - today our guest blogger Bika has another breakfast tip for you. If you need to be quick on the way to work or before college in the morning, these healthy breakfast muffins with blueberries are perfect. They can be prepared over the weekend and you'll have something to look forward to on Monday!

Ingredients

Makes 12 muffins | Preparation time: 15 minutes | Baking time: 20 minutes

250g blueberries
150g wholemeal spelled flour
125g 3Bears Porridge Poppy Banana
50g walnut protein powder
2 teaspoons of baking soda
2 eggs
50ml sunflower oil
200ml milk
2 tbsp agave syrup
butter
breadcrumbs

preparation

  1. Preheat the oven to 180 degrees, top and bottom heat.
  2. Check the blueberries, sort them out and wash them.
  3. Put the remaining ingredients in a bowl and mix with a hand mixer.
  4. Add the blueberries and stir in lightly with a spoon.
  5. Grease the hollows of a muffin tin with butter and sprinkle with breadcrumbs.
  6. Divide the dough evenly between the cavities and bake the muffins in the oven for 20 minutes.

Since the muffins are not that sweet, they are more suitable for breakfast or as a snack in between. With a little sugar and wholemeal wheat flour instead of spelled, it's also fabulous as a dessert! For even more variety, try the muffins with our other varieties! Bika thinks that poppy banana goes very well with blueberries, but why not use three types of berries too? Or a chocolaty version with fine cocoa ? Have fun baking and enjoy it!
