When it starts to get colder and your home invites you to spend more and more warm, cozy tea hours, then it's time for a wonderful, warm breakfast. Between autumnal apples and Christmas cinnamon, these pancakes from @anna.culina will find the perfect place on your breakfast table in the run-up to Christmas.
Ingredients for approx. 16 pancakes
For 1 glass of plum compote

4 plums (400g)

240ml water
-
100g brown sugar
-
1/4 teaspoon cardamom
-
1/2 teaspoon cinnamon
Preparation
- For the plum compote, pit and quarter the plums
- Bring the water to the boil in a small saucepan, then stir in the sugar until completely dissolved
- Add the plums with the spices to the pot and simmer with the pot closed for 10 - 15 minutes
- Remove the plums from the pot and place them in a large mason jar. Continue cooking the liquid uncovered to thicken and then pour over the plums
- For the pancakes, mix the dry ingredients together and then stir in the liquid ingredients. Let the dough rest for about 20 minutes
- Heat some coconut oil in a large pan. For one mini pancake, add a heaping tablespoon of batter to the pan. Cook over medium heat until golden brown on both sides
- Enjoy the pancakes together with the plum compote in a cozy place.
Tip 1: The recipe makes more plum compote than needed, but it also tastes fantastic with porridge or desserts.
