Berry Banana Muffins - A simple recipe for every occasion

Beerige Bananen-Muffins - ein einfaches Rezept für jeden Anlass

It was a sunny September day when the leaves slowly turned colourful and fell from the trees. Autumn was already knocking on the bear's hut and there was a fruity smell of berries coming from the bowls and, because the delicious porridge was still too hot, the bears went outside to let it cool down a little. The three bears were at the edge of the forest collecting chestnuts when they remembered that Goldilocks wanted to come over for afternoon tea. But what should they offer now? Luckily, the bears found Plantisserie on Instagram, who had a fabulous and quick muffin recipe with our wonderful new variety, Dreierlei Berry !

Well, the three bears were lucky again. And if you want to bake the recipe yourself, then you've come to the right place!

Preparation time: 10min | Baking time: 20-25min

Ingredients

200g spelled flour
100g 3Bears Porridge Three kinds of berries
3 tsp baking powder
75g cane sugar
1 pinch of salt
2 ripe bananas
150ml oat milk
50ml sunflower oil
200g berries (e.g. raspberries, blueberries & blackberries)
Some 3Bears Porridge to sprinkle on top

For the flax egg:
1 tbsp ground flaxseed
3 tablespoons water

Preparation

First, the Flax Egg is made from linseed and water. Simply stir together and let rest for 5 minutes.

Preheat the oven to 200c top/bottom heat.

Then mash the bananas with a fork. Beat the egg, oat milk, oil and sugar with the flax until foamy. Now mix in the 3Bears Porridge and the remaining dry ingredients and finally fold in the berries.
Divide the dough between 12 muffin cups and sprinkle with oat flakes.

Bake the muffins on medium heat for 20-25 minutes.

Hallo!
Heute habe ich 6 dieser leckeren bärigen Muffins gebacken. Eine überreife Banane dafür hatte ich im TK (geschält friere ich die manchmal in Stücken für Smoothies oder Shakes ein) und TK Himbeere und Heidelbeeren waren auch noch da.

Sehr lecker, deutlich weniger süß als andere Muffins daher kann man die auch mal zum Frühstück essen, würde ich meinen. Habe direkt die Idee das ganze mit dem Kokosnuss Porridge und Mangostückchen auszuprobieren oder exotische Früchte mit passendem Obst, … sehr gut :-)

Superleckeres, schnell gemachtes Rezept! Die Muffins sind sehr saftig und süß fruchtig!
Wir haben die Beeren tiefgekühlt zum Teig gegeben, dann waren sie (lauwarm gegessen) leckere beerige Inseln im Muffin.
